Blackstrap molasses is the final product of the sugar‑cane refining journey. After the cane is crushed to extract its juice, the liquid is boiled once to make a thick cane syrup. A second boil yields a darker, more viscous syrup, and a third, longer boil produces the thick, dark‑brown liquid we know as blackstrap molasses. Because it is the last drawing‑off, it contains the least residual sugar of any sugar‑cane derivative and carries a distinctly bitter, yet subtly sweet, flavour. A little goes a long way.
